What is the minimum hd/ramm size requirements for iTunes? The flash drive would have to be bigger than that...I'm guessing at least 1GB to do it properly.

iTunes can be run from a flash drive, but only on the computer it was originally installed on (it cannot be moved to another PC without reinstalling). You just need to specifiy the flash drive as install location while installing iTunes. You may also have problems if the flash drive is ever absent from the PC (eg. registry errors reporting missing files). iTunes requires about 150-200MB to install, so a 256MB flash drive should cover it.
