2003 software RAID1, second drive not bootable

I have a server that had two 320GB drives. The C drive was mirrored on them using dynamic disks, 30GB volume. I took one of the 320 drives out and replaced it with a 250 (don't worry about why, that explanation is irrelavant and long). I then booted to the remaining 320, removed the mirror, then added a new mirror so that the C drive is mirrored between the 320 and the 250. When I did this I got the error:

"Logical Disk Manager could not update the boot file for any boot partitions on the target disk. Verify your arcpath listings in file boot.ini or through the bootcfg.exe utility."

I am still able to boot the 320 drive, but when it begins booting and I choose the second drive, the 250 I get an error about the file ntoskrnl.exe being missing.

I have tried doing a chkdsk to both drives, no problems
I have tried redoing the mirror
I have verified both drives use the same driver
I have verified both drives are connected properly to the correct controller
I have tried manually editting the boot.ini by adding lines to try and boot from rdisk 1,2,3,4, and 5 (0 is the 320), same error on each.
I have tried doing a fixboot and fixmbr in Recover Console for the second drive, still broken
*Note that I can only see both drives if I use the Recovery Console I installed using "winnt32.exe /cmdcons", the one on the 2003 CD cannot fully see all drives and claims there is no Windows installation.

So, this is not a hardware issue, driver issue, or boot.ini issue. What is the problem?

Windows Server 2003 Standard x86
ASUS A8N-SLI
Western Digital SATA hard drives (unknown model numbers, if you really need them I will get them)

You need to format a floppy on Windows 2003 then copy
ntldr
ntdetect.com
boot.ini

to the floppy. Edit boot.ini to give the correct ARC path to the 250GB.

It's pretty much the same process as outlined here for NT.
