i noticed that my full real name is on all my emails why is this and how can i get rid of it so the whole world doesn't see it????

You mean it's at the bottom of all of your emails, as in a signature or someting? Or are you talking about something else?

I don't use Hotmail, but surely there's a "Profile" page that you can edit to set up by yourself and show to the world just what you want everyone to see.

In Hotmail you need to edit your user profile, change the firstname/lastname fields to what you would prefer to be displayed. Hotmail will use these fields on your email automatically, there is no way to change that behaviour.
