Mark,
A tad more info would be helpful, but depending on your configuration, you may be able to boot into the OS you want to keep, and edit the boot loader (boot.ini), then simply delete the "other" Windows folder.
You can edit boot.ini from within the system properties applet (select advanced tab, startup and recovery, click edit button).
For single OS with 2 partitions, boot.ini should look similar to this:
[boot loader]
timeout=5
default=multi(0)disk(0)rdisk(0)partition(2)\WINDOW S
[operating systems]
multi(0)disk(0)rdisk(0)partition(2)\WINDOWS="Micro soft Windows XP Home Edition" /fastdetect /NoExecute=OptIn
