Windows 10 and a no brand computer.

I have a huge volume of items including docs, pix and videos to examine and sort in different ways based on what it says and who said what to whom but I am not allowed to either affect the text or the document such as by inserting comments and I'm not allowed to change the file structure, and I really don't want to deal with multiple layers of duplicates or shuffled file structures.

I'm thinking I can insert something in the meta data and be able to sort on that when the time comes. I saw software that will let me delete meta data in bulk but so far not software that will allow me to add meta data in bulk.

Anybody know what software will do that?
